Nōksu means a clear stream running down from the valley.
Eight subway lines overhead. In here, one counter and the quiet of the kitchen.
Nōksu seats fifteen guests around a black marble counter, close enough to watch every plate being finished. The menu is ten courses, mostly from the water: finned fish, shellfish and a single course of meat, all cooked through a Korean lens.
“Uncannily good.”
